Arrowood Farms, in Accord, N.Y., caught my eye in 2016 because it was a brewery growing its own hops. The Hudson Valley farm has now grown to include a restaurant, the Apiary, and a distillery, which, like the brewery, is sustainable, using yeast developed from its own honey cultures, locally grown grain and water from a spring on the property. The vodka (80 proof) is quite neutral, mostly about its satiny texture to enjoy well chilled, with just a twist. Caviar would not be a mistake alongside. The gin (90 proof) is dry, but with hints of citrus peel, wildflowers and pine both on nose and palate, making it good martini material if you don’t overdo the vermouth. Their new bourbon (90 proof) aged in Adirondack oak barrels is $35 for a 375-milliliter bottle. The brewery has expanded to produce a range of beers and ales, some seasonal. Come summer, you’ll want Lion’s Tooth, a farmhouse ale brewed with dandelion.
